Hospitality learners host restaurant evening

The hospitality studies learners at Waterberg Academy at Vaalwater always host restaurant evenings during the third term.

 “These evenings normally consist of a four course meal that is prepared and served by the Grd 10-12 learners,” said André Bridger, the very capable Hospitality Studies educator of Waterberg Academy. 

“A limited amount of tickets are on sale just a few weeks before these events and are normally sold out very quickly,” he added.

Bridger explained to The Post that the restaurant evenings are used to assess the skills and techniques of the learners in the kitchen, as well as in the dining room that were taught to them throughout the year.

The highlight of these evenings is usually the last function. In this case the one that was held on Friday,15 Sep-tember. 

The menu started with a puree St. Germain soup with puff pastry twists, followed by an entrée of smoked salmon roulade. A main course of chicken jam-bonette, grilled polenta, stuffed green patty pans and butternut croquettes were served with a berry bavarois and tuilles as dessert.

Bridger said the guests praised the learners for the quality of the food and the service at the event. Bridger is very proud of each learner in his hospitality class and congratulated them on the successful evening.
